  1. Heat oil over medium heat in a large skillet.
  2. Add sweet potatoes to the skillet once it’s warm.
  3. About 5 minutes after sweet potatoes start cooking, add peppers. Sautee until all veggies are cooked through
  4. In a separate small skillet, cook chicken apple sausage. You can cook it in a bit of coconut oil, I used coconut oil cooking spray.
  5. Once chicken apple sausage is headed through and all the veggies are done, combine in the large skillet. Add a little salt and pepper.
  6. Serve and enjoy!
