My last year teaching, I made ice cream cone cupcakes for my students for our end of the year party. I had so much fun making them and the kids absolutely loved them. I made them again a few years ago for AG’s 2nd birthday party. I was reminded again of how much the kids loved them and even more, how much fun they were to eat. I made a mental note for them to be a summer and end of the year tradition in our family.
Friday is the last day of school for AG. I can’t believe next year she’ll be in Pre-K! I wanted to make these for AG’s end of the year picnic but there are food allergies in her class, so we can only bring in popsicles for snacks. Thankfully we have some memorial day festivities this weekend to attend. One party will have lots of littles, so I’ll be bringing them there instead. When I was at Target last week, I spotted red, white and blue funfetti cake mix which will be perfect for this recipe.
These cupcakes really are such a hit at parties. While they are a touch more involved than the typical cupcake, they’re worth it!
